Baked Zucchini
Ingredients
- Zucchini — to serve
- Avocado oil — (avocado oil works well with high burn point, but olive oil also works)
- Garlic powder, oregano — to taste
- Grated parmesan cheese — to taste
- Salt and pepper — to taste (add at the end to prevent sogginess)
Instructions
- Cut zucchini into strips (cut whole zucchini horizontally into thirds, cut circular part in half, then each into 2-3 strips). Lay on baking sheet with space between pieces.
- Bake at 425F for 10-15 minutes. Flip over and sprinkle on parmesan cheese.
- Broil for another 5 minutes.
- Let cool, then season with salt and pepper before serving.
