Baked Zucchini

Baked Zucchini

Ingredients

  • Zucchini — to serve
  • Avocado oil — (avocado oil works well with high burn point, but olive oil also works)
  • Garlic powder, oregano — to taste
  • Grated parmesan cheese — to taste
  • Salt and pepper — to taste (add at the end to prevent sogginess)

Instructions

  1. Cut zucchini into strips (cut whole zucchini horizontally into thirds, cut circular part in half, then each into 2-3 strips). Lay on baking sheet with space between pieces.
  2. Bake at 425F for 10-15 minutes. Flip over and sprinkle on parmesan cheese.
  3. Broil for another 5 minutes.
  4. Let cool, then season with salt and pepper before serving.
