Beef and Broccoli

Classic Chinese take-out, made better at home. Use high quality beef for an upgrade.
Serves 3-4
Ingredients
Beef:
- Flank steak — 1 lb, cut into 1/4” strips against the grain
- Baking soda — 1/4 teaspoon
- Oyster sauce — 1 tablespoon
- Light soy sauce — 1 tablespoon
- Salt — 1/2 teaspoon
- White pepper — 1/4 teaspoon
- Neutral oil — 1 tablespoon (I use avocado oil)
- Cornstarch — 1 tablespoon
Sauce:
- Light soy sauce — 2 tablespoons
- Dark soy sauce — 1/2 tablespoon
- Oyster sauce — 2 tablespoons
- Sugar — 1 tablespoon
- White pepper — 1/2 teaspoon
- Sesame oil — 1 teaspoon
- MSG — 1/4 teaspoon (optional)
- Shaoxing wine — 1 tablespoon
- Chicken stock — 1/2 cup (can sub with water)
- Cornstarch — 1/2 tablespoon
Vegetables, oil, and garnish:
- Neutral oil — 1/4 cup
- Broccoli — 1 lb, cut into 2” pieces
- Garlic — 5 cloves, chopped
- Ginger — 1 tablespoon, chopped
- Sesame seeds — 1 teaspoon, for garnish
Instructions
- Slice 1 lb flank steak into 1/4” strips against the grain, then add to a bowl with 1/4 teaspoon baking soda, 1 tablespoon oyster sauce, 1 tablespoon light soy sauce, 1/2 teaspoon salt, 1/4 teaspoon white pepper, 1 tablespoon neutral oil, and 1 tablespoon cornstarch. Mix until combined and marinate for 15 minutes.
- In a small bowl, mix the sauce by combining 2 tablespoons light soy sauce, 1/2 tablespoon dark soy sauce, 2 tablespoons oyster sauce, 1 tablespoon sugar, 1/2 teaspoon white pepper, 1 teaspoon sesame oil, 1/4 teaspoon MSG (optional), 1 tablespoon Shaoxing wine, 1/2 cup chicken stock, and 1/2 tablespoon cornstarch.
- Bring a large pot of water (5 quarts) to a boil over high heat and blanch the 1 lb broccoli for 30 seconds to 1 minute, or until bright green and slightly softened but still firm. Drain and set aside.
- Add 1/4 cup neutral oil to a wok or large pan over high heat until just smoking. Sear the marinated beef strips for 2-3 minutes until nicely browned. Remove the beef to a tray and set aside, leaving the oil in the pan.
- In the same pan over medium-high heat, fry 1 tablespoon chopped ginger and 5 cloves chopped garlic for 15 seconds. Add the broccoli and stir-fry for 30 seconds.
- Add the beef back, followed by the premixed sauce, and continue cooking for 1-2 minutes until the sauce has thickened slightly and coated the beef and broccoli.
- Garnish with 1 teaspoon sesame seeds. Serve with freshly steamed white rice.
