Beef and Broccoli

Beef and Broccoli

Adapted from CJ Eats

Classic Chinese take-out, made better at home. Use high quality beef for an upgrade.

Serves 3-4

Ingredients

Beef:

  • Flank steak — 1 lb, cut into 1/4” strips against the grain
  • Baking soda — 1/4 teaspoon
  • Oyster sauce — 1 tablespoon
  • Light soy sauce — 1 tablespoon
  • Salt — 1/2 teaspoon
  • White pepper — 1/4 teaspoon
  • Neutral oil — 1 tablespoon (I use avocado oil)
  • Cornstarch — 1 tablespoon

Sauce:

  • Light soy sauce — 2 tablespoons
  • Dark soy sauce — 1/2 tablespoon
  • Oyster sauce — 2 tablespoons
  • Sugar — 1 tablespoon
  • White pepper — 1/2 teaspoon
  • Sesame oil — 1 teaspoon
  • MSG — 1/4 teaspoon (optional)
  • Shaoxing wine — 1 tablespoon
  • Chicken stock — 1/2 cup (can sub with water)
  • Cornstarch — 1/2 tablespoon

Vegetables, oil, and garnish:

  • Neutral oil — 1/4 cup
  • Broccoli — 1 lb, cut into 2” pieces
  • Garlic — 5 cloves, chopped
  • Ginger — 1 tablespoon, chopped
  • Sesame seeds — 1 teaspoon, for garnish

Instructions

  1. Slice 1 lb flank steak into 1/4” strips against the grain, then add to a bowl with 1/4 teaspoon baking soda, 1 tablespoon oyster sauce, 1 tablespoon light soy sauce, 1/2 teaspoon salt, 1/4 teaspoon white pepper, 1 tablespoon neutral oil, and 1 tablespoon cornstarch. Mix until combined and marinate for 15 minutes.
  2. In a small bowl, mix the sauce by combining 2 tablespoons light soy sauce, 1/2 tablespoon dark soy sauce, 2 tablespoons oyster sauce, 1 tablespoon sugar, 1/2 teaspoon white pepper, 1 teaspoon sesame oil, 1/4 teaspoon MSG (optional), 1 tablespoon Shaoxing wine, 1/2 cup chicken stock, and 1/2 tablespoon cornstarch.
  3. Bring a large pot of water (5 quarts) to a boil over high heat and blanch the 1 lb broccoli for 30 seconds to 1 minute, or until bright green and slightly softened but still firm. Drain and set aside.
  4. Add 1/4 cup neutral oil to a wok or large pan over high heat until just smoking. Sear the marinated beef strips for 2-3 minutes until nicely browned. Remove the beef to a tray and set aside, leaving the oil in the pan.
  5. In the same pan over medium-high heat, fry 1 tablespoon chopped ginger and 5 cloves chopped garlic for 15 seconds. Add the broccoli and stir-fry for 30 seconds.
  6. Add the beef back, followed by the premixed sauce, and continue cooking for 1-2 minutes until the sauce has thickened slightly and coated the beef and broccoli.
  7. Garnish with 1 teaspoon sesame seeds. Serve with freshly steamed white rice.
