Black Bean Rice

Good way to switch up protein intake!

Ingredients

  • Black beans — 1/3 cup, soak overnight
  • White/brown rice — 1/2 cup
  • Quinoa — 1/3 cup

Instructions

  1. Wash and soak black beans overnight.
  2. In a rice cooker, put in the soaked beans, rice and quinoa. Put water line to 1.5 cups.
  3. Optional: add butter, cheese, or olive oil to serve.
