Dry Rub Chicken Drumsticks

This is so good I often eat it with them! The recipe is for a large portion, but clearly you can scale down and make much smaller portion.

Ingredients

  • Chicken drumsticks or thighs — 2 pounds, can be with skin or skinless

Dry rub:

  • Olive oil or avocado oil — 2 tablespoons
  • Paprika — about 1 tablespoon (optional for kid recipe)
  • Garlic powder — about 1 tablespoon
  • Onion powder — about 1 tablespoon
  • Chopped parsley — about 1 tablespoon
  • Salt — about 1/2 teaspoon
  • Pepper — about 1/2 teaspoon

Instructions

  1. Marinate chicken in the dry rub. Marinate for 2 hours or more. If making a big batch, use a ziplock bag.
  2. Bake at 425F for 40-45 minutes. Check for 165F internal temperature before serving.
