Homemade Meatballs

For the meat, you can use 100% ground beef (85% lean / 15% fat preferred), or half beef / half pork. I prefer the latter which has a better texture, especially if you plan to freeze and reheat the meatballs.

Ingredients

  • Ground beef, or a mix of ground beef/pork — 1 pound
  • Eggs — 1
  • Italian style breadcrumbs — 1/2 cup
  • Grated Parmesan cheese — 1/4 cup
  • Yellow onion — finely diced, 1/2 (we like a lot of onion, can use less)
  • Garlic — finely diced, 3-4 cloves
  • Kosher salt — 1 teaspoon
  • Pepper — 1/2 teaspoon
  • Italian seasoning, garlic powder, onion powder — to taste

Instructions

  1. Mix all ingredients in a bowl and shape into 1-1.5” balls.
  2. Bake the meatballs:
    • Bake in oven at 375F on lower middle rack
    • Bake for 20-25 minutes, flipping halfway through to brown both sides
    • Cook to 165F internal temperature before serving

Or broil the meatballs:

  • Place in lower-middle rack
  • Cook until surface is browned, about 10-12 minutes
  • Flip the meatballs and cook for another 2-3 minutes to brown the other side
