Roasted Parmesan Leeks
If you like the flavor of onion and scallion, you will love leeks. A very tasty and easy dish!
Ingredients
- Leeks — cleaned and halved lengthwise
- Grated Parmesan — for topping
- Olive oil — (or avocado oil for higher smoke point), generous amount
- Salt, pepper, garlic powder — to taste
- Red pepper flakes — optional
Instructions
- Trim leeks, cutting them in half lengthwise. Cleanse and dry thoroughly.
- Arrange on a baking pan and drizzle generously with olive oil. Sprinkle with salt, pepper and garlic powder.
- Bake at 425F for 20 minutes. Remove and sprinkle with parmesan. Continue to bake for another 10 minutes.
