Roasted Parmesan Leeks

If you like the flavor of onion and scallion, you will love leeks. A very tasty and easy dish!

Ingredients

  • Leeks — cleaned and halved lengthwise
  • Grated Parmesan — for topping
  • Olive oil — (or avocado oil for higher smoke point), generous amount
  • Salt, pepper, garlic powder — to taste
  • Red pepper flakes — optional

Instructions

  1. Trim leeks, cutting them in half lengthwise. Cleanse and dry thoroughly.
  2. Arrange on a baking pan and drizzle generously with olive oil. Sprinkle with salt, pepper and garlic powder.
  3. Bake at 425F for 20 minutes. Remove and sprinkle with parmesan. Continue to bake for another 10 minutes.
